One interesting early title would be "Mechanics of the Brain" by Pudovkin.

For a more mainstream documentary, a fabulous science film is "Death by Design" by Peter Friedman and Jean-Francois Brunet. It's about programmed cell death ("with a cast of billions"); it is both informative and fun to watch.
