[Frameworks] mpeg-2

Compressor is a great tool for complex tasks: for instance, structuring a
job with multiple assets and multiple transcodes to multiple destinations
and leaving it running overnight. One example of its professional use might
be taking a complete program and then simultaneously creating derivative
versions for DVD, streaming, and download. In this kind of situation it
suddenly becomes wonderfully intuitive and powerful, and instills Apple's
unique freewheeling sense of euphoria within the user.

But myself and I'm sure many others can identify with the feeling that when
you're doing something simple, it's extremely intimidating and confusing! I
second the recommendation of MPEG Streamclip for something like taking one
piece of footage and transcoding.

Another useful tool if you are starting to do more digital video work is
MediaInfo: http://mediainfo.sourceforge.net/en

This can help you identify information that's useful for transcoding like
frame size, frame rate, and bit rate.
